Gluten and Grain free Vegan Pizza

I have a client with a young son who suffers from Autism. We work together on creating a grain free, gluten free, and Paleo inspired diet with lots of sprouted seeds and most recently water kefir. Being restricted from regular kid’s fun foods, like pizza, I was driven to get creative to come up with some ideas. This was also created from a previous client who was on an extremely strict vegan diet, with only ancient grains allowed. I married the issues together and out came this very delicious and kid friendly recipe.
