Ingredients:
One medium Cucumber, peeled and deseeded
2 cups greek yoghurt
4 cloves of garlic, minced
½ teaspoon salt
2 tbsp champagne vinegar
juice of two lemons
½ cup extra virgin olive oil
1 shallot, peeled and sliced
Small handful of dill
Grate and salt the cucumber very well and place into a colander. Leave to drain for half an hour. When ready, place in a cheese cloth or paper towels and squeeze until all of the water has been eliminated. Place into a food processor with the remaining ingredients. Blend.
