Sweet & Sour Aubergine Half Moons



2 small aubergines, cut in half and then into half moons

1 purple onion, sliced thin

1 tbsp raisins

1 tbsp pomegranate molasses

juice of one lemon

drizzle of honey

garlic spray to finish

finely chopped parsley to finish

rapeseed oil for frying


Fry in a large pan, the aubergine until they are golden on each side. Add the onions and raisins and saute. Add the lemon juice, honey, and bit of water to loosen. Cook until soft. Sprinkle with parsley to finish
