Fig Green Bean Pomegranate Feta & Pistachio Salad



Two handfuls green beans

8/10 fresh figs, quartered

I cup pistachios

1 cup of pomegranate seeds

1 ½ cups of crumbled feta

I bunch of finely chopped mint

1 to 2 tbsp of sumac



2 /3 tbsp of pomegranate molasses

1 teaspoon of fruit syrup

½ tsp of salt

juice of one lemon

1 shallot, peeled and quartered

4 cloves of garlic

1/3 of olive oil


Blanche the green beans in salted boiling water for about 3 minutes, add baking soda to enhance the green color if desired. Immediately put in an ice bath of ice and water and cool down. Dry on paper towels.


Put all of your dressing ingredients into a bullet and blend well. Season to taste.


Layer your salad in a large bowl- green beans, then figs, then pistachios, pomegranate, feta mint, a large tbsp. or two of dressing drizzled around. Finish with sprinkling of sumac. Then make another layer until complete. Serve immediately.
