Ingredients:
10/12 stalks of Broccoli Rabe
3 tbsp hemp Hearts
3 tbsp germinated buckwheat (pre-soaked for thirty minutes)
zest and juice of one lemon
Pesto:
2 garlic cloves
½ cup cashew
1 bunch of basil
¾ tbsp. olive oil
salt
Bring a pot of salted water to boil. Place a bowl of iced water nearby and set aside. Peel the stems of the broccoli and chop the tips. Place in the boiling water until bright green, or about two minutes. Immediately place in the ice bath. Heat a grill pan until very very hot. Put all the pesto ingredients into a food processor. Season to taste and set aside. Drain the broccoli and place onto the grill pan. Put a heavy pot on top and grill until crisp. The grill pan must be very hot or the broccoli will stick. Rotate one and repeat. Add all the ingredients in a big bowl and mix well.
