Raw Breakfast Bar with Cacao Nibs

Gluten Free/Sugar Free/Dairy Free/Vegan/Raw  

8 dates, chopped

¼ cup raw sunflower seeds

¼ cup almonds

¼ cup shredded coconut

½ cup ground flax seeds

½ cup hemp hearts

½ cup rolled oats

1 tsp vanilla paste

4 tbsp maple syrup

2 to 3 tbsp coconut oil, softened

1 tsp salt

1 tbsp chia seeds

2 tbsp cacao nibs

Coconut butter


Combine dates, sunflower seeds, almonds, coconut, flax, hemp, vanilla, maple syrup, salt, and coconut oil into a food processor. Will need to do in batches. Transfer to a bowl and add the chia seeds and cacao nibs. Use your hands to form a batter into a rectangular shape in a baking dish. Make sure to wrap the dish with plastic wrap for easy removal. Place in the freezer for 10 minutes or in the fridge for 30 minutes to half an hour to harden. Remove and slice. Drizzle with coconut butter if desired. Store in the refrigerator.
