FODMAP: Gazpacho

This is a delicious soup for anyone, FODMAP or not. I have found that watermelon is a great replacement for tomatoes, but this is only if you are not on the diet. Also what is great about Gazpacho is it is perfectly raw, therefore retaining all of the nutrients of the vegetables. I like to sprinkle mine with seeds for added texture and protein.

Serves 2

3 full-flavoured ripe tomatoes, quartered and seeded

¼ cucumber, peeled, de-seeded, and coarsely chopped

1 red pepper, seeded and coarsely chopped

1 green top of leek

1 slice of gluten free bread, about 30 g (1 oz), torn into pieces

2 tbsp red wine vinegar

½ tsp salt

2 tbsp garlic oil

1 cup veg broth

1 tbsp tomato purée

handful of coriander with stems

salt and pepper

one red chili

To serve

 

4 spring onion tops

¼ cucumber

2 slices of gluten free bread, chopped, toasted, and fried for croutons

. Mix all the ingredients in a large bowl. Ladle batches of the mixture into a blender and purée until smooth. Pour the soup into a large clean bowl, cover and chill.
